How We Build a Menu

A Pixelfswift menu proposal starts with a discovery call or brief in which we learn the event's format (plated, buffet, stations, family-style, or cocktail reception), the dietary landscape of the guest list, any cultural or religious requirements, and the client's own culinary preferences. From that brief, our head chef drafts two or three menu directions — each with a clear flavour identity — and we refine the chosen direction through one or two tasting sessions at our Calgary kitchen. Final menus are delivered in a structured document that includes allergen matrices, service sequencing notes, and staffing requirements, so your venue coordinator has everything they need on file.

Plated Dinner Service

Two-to-five course seated dinners with synchronized plating across tables. Suited to weddings, gala fundraisers, and formal corporate dinners where a consistent guest experience and precise timing are priorities.

Buffet & Station Service

Staffed buffets and live-action stations — carving stations, poke bars, pasta stations — that give guests agency over their plates while keeping the presentation polished and the replenishment invisible.

Cocktail Reception

Passed canapés and small-plate stations for standing receptions of 30 to 400 guests. We calibrate the number of canapé rounds and the variety of options to the reception's duration and guest density.

Seasonal Tasting Menus

For intimate events of 20 to 60 guests seeking a premium culinary experience: a structured tasting progression of five to eight courses, each accompanied by a brief written note on its provenance and preparation.

Corporate Lunch & Breakfast

Efficient, well-presented working meals for boardroom meetings, all-hands sessions, and training days. Delivery, setup, and breakdown are scheduled around your agenda — no disruption to the meeting flow.

Menu Questions We Hear Most Often

How far in advance must we confirm the menu?

We ask for a confirmed menu no later than three weeks before the event date. This allows time to source specialty ingredients, complete tasting adjustments, and finalize the allergen documentation. For events of 200 or more guests, we recommend four to six weeks.

Can you accommodate multiple dietary requirements in the same service?

Yes. Our kitchen labels and tracks every dietary variant — vegan, gluten-free, nut-free, halal, kosher-style — through a dedicated production sheet. Guests with restrictions receive their course at the same time as the rest of the table, plated and presented identically.

Do you offer tastings before we commit?

Yes. For weddings and events of 80 or more guests, we include one complimentary tasting session at our Calgary kitchen, typically 8 to 10 weeks before the event. Additional tastings are available at a flat rate per session.

Can the menu change if ingredient availability shifts?

Seasonal sourcing means that specific varieties occasionally become unavailable close to the event date. In those cases, we notify the client immediately and propose a substitution of equivalent quality and flavour profile. We do not make ingredient changes without explicit client approval.
